After years of honing his craft in Ontario, Chef Brian Foster and his family felt the pull of the Maritimes. The east coast had gotten in their blood while they lived here from 2001 to 2007 and they decided to take a leap of faith in 2012 to move back to Fredericton and pursue their goals. They founded a small catering company named MOCO, which led to the opportunity for Chef Brian to open a restaurant in the historic lodge in Mactaquac Provincial Park. In 2016, Brian and his wife and partner Shawna realized a dream – they opened MOCO Downtown, a restaurant inspired by Italian flavours and sensibilities located in the heart of Fredericton. Today, Chef Brian remains committed to searching out the best products made by, grown by, or raised by people he knows and who share his passion for delicious food.
